Made my first meatloaf tonight and it was a success! Experimented a little and it was very easy to do. I decided to make it from ground turkey instead of beef to make it a little healthier. But it was still very tasty!
You will need a 5"x9" metal loaf pan for this.
Ingredients:
- 1 pound ground meat (turkey or beef)
- 1/2 cup shredded Cheddar cheese
- 1/2 cup salsa (Avoid the real watery style. Less water the better)
- 1/2 cup bread crumbs (I prefer the "Italian Seasoned")
- 1 egg, lightly beat it so the yolk and egg white are mixed together nicely
- 1/2 of 1 large white onion
Directions:
- Preheat the oven to 375 degrees F
- In a big bowl, mix the meat, salsa, bread crumbs, cheese, egg. Place to the side.
- Chop the half of the white onion up into small pieces. Separate the chopped onion into 3 piles.
- Take one of the piles of onion and spread it evenly across the bottom of your loaf pan.
- Grab half the mixed up meat out of the bowl and spread it out evenly in the loaf pan.
- Grab the 2nd pile of onions and create another thin layer and place the rest of the mixed meat on that layer of onions. Then grab the 3rd pile of onions and make a layer over the top of the meat again.
- Bake for 45 minutes in the preheated oven. At 45 minutes, stick a thermometer in it and make sure its at least 160 degrees F in the center for health safety reasons. If its at least 160, it should be cooked just plenty to eat.
Remember to use a somewhat dry Salsa. None of that super watery stuff. And get it as spicy as you want.
This meatloaf went with Rice Pilaf tonight and I think it was a perfect match. I was pretty impressed that it went as successfully as it did.![]()
