Not sure how many of you here have eaten bruschetta before, but I'm personally sick of that store-bought garbage that comes in a jar. 2 lbs - Diced Tomatoes 1/4" 1/4 lbs - Diced Red Onion 1/8" 1/2 Tbsp - Finely Diced Fresh Basil 1oz - Diced Jalapeno 1/8" (optional for spice) 1/2 Tbsp - Black Pepper 1/4 Tbsp - White Pepper (optional) 1/4 Tbsp - Tabasco Sauce (optional for spice) 1/2 oz - Malt Vinegar (you can sub in white vinegar if you like) 1/2 Tbsp - Lemon Juice 1 Tbsp - Sugar 2 Tbsp - Minced Garlic (don't use that shit from a jar, cut up your own garlic) 1/2 Tbsp - Salt 1/4 cup - Olive Oil Chop up the tomatoes and the onions and put them together in a mixing bowl. Add the rest of the ingredients one by one, mixing well after each addition. This mixture should yield roughly 2L of product and will last for at least 2 days, 3 if properly refrigerated at all times. You can eat bruschetta with whatever you want really, but I prefer garlic toast, like most people. Foccacia bread is also a very good choice. Alternatively, you could add this to any type of spaghetti sauce to jazz things up a bit. Your call really, but give it a shot sometime.

Sounds good. I'll have to try this sometime. I've never done a decent Brushetta at home before. Just done the basil and chopped onions with olive oil on bread. Very good, but nothing fancy. Have to try this sometime.
